I am shamelessly in love with food. Not only that, I am REALLY good at making some tasty dishes for the health of myself and my family.
We eat mostly a plant based diet because heart disease and cancer run in my family and I like to keep our diet clean. We will occasionally indulge in a nice, lean filet or some farm raised poultry but for the day to day, you will find us eating more like this.
Not only is this salad extremely filling, it is full of healthy fats and HUGE flavor. Plus, it's very easy to put together! The ingredients in this salad are really beneficial for the skin. This is a fantastic vegan salad recipe for you and your family to enjoy!
Olive Oil is high in antioxidants to help protect your body from free radicals. Avocado is packed with fatty acids and vitamins C & E (also amazing for your skin). And finally, to be totally honest here...Tahini is a nearly perfect food for your body and for the health of your skin. Its benefits include copper, zinc, iron, calcium, Magnesium, B1, Selenium, fiber & protein.
Here is the recipe breakdown below:
A few handfuls of fresh salad greens (I use greens grown locally by Tassinong Farms here in CO)
Half of an avocado (sliced)
Shredded Carrots (however much you like)
Cuces (the cool way of saying cucumbers...and again...however much you want)
1/4C Blistered Sweety Drop Peppers (the star of the show here..you can get these on amazon. #worthit). Throw in a screaming hot pan and roll around until they have a little color (not burnt...just a little golden and crispy on a side or two)
My signature vegan caesar dressing. Oh what’s that you say? You want the recipe? OK! This recipe will serve 2 ppl! Double or triple for a crowd.
Vegan Caesar Dressing
2 TBSP of Tahini
Juice from half a lemon
1 small minced garlic clove
a few pinches of pink salt
A pinch of black pepper
1/4 C olive oil (slowly whisk it in)
